In this essay we take a process from everyday life and discuss it as a stepwise process that involves multiple levels of decision making. The process chosen for this purpose involves the acquisition, preparation, use and disposal of a leg of meat and, in doing so, the production of products and by-products. Striving to identify the processes involved in processing leg of lamb in such a way that they are “interpretable” for future generations is the ultimate goal of this essay. LAMB AS A RAW MATERIAL Wikipedia (1, 2009) defines lamb as the meat of domestic sheep, specifying that lamb is the meat of a young sheep, while a pig or sheep is the meat of 'a much older sheep. Lamb cost values provide for different classification systems in different countries. This allows the consumer to purchase their needs accordingly. The definition of lamb varies greatly from country to country. New Zealand, for example, has the following classifications: Lamb: Sheep less than 12 months old, with no incisors. Hogget: Young male or female sheep with no more than two incisors. Sheep: Refers to an older female. or a castrated male sheep that has more than two incisor teeth. The younger the lamb, the more tender and pink the meat, while mutton generally has much darker flesh. Many other specific classifications of lamb are used in various locations, such as spring lamb, baby lamb, yearling lamb, and suckling lamb, which can be purchased in some countries ( Wikipedia 1, 2009).
