    The Unhealthy Evolution of WheatI've talked a lot about healthy eating and drinking in my previous articles. It is crucial to eat plenty of vegetables, fruits and drink pure water; but what about wheat products? Wheat has evolved into a substance that is no longer a natural substance and can harm your health. We are seeing more wheat allergies than ever before. There is a reason for this; the following will explain it. How has wheat changed? Wheat production is not a new phenomenon. Wheat has been successfully cultivated for thousands of years. Since the industrial revolution, wheat cultivation has undergone a radical change. Everything has changed; how we grow wheat, how we process it, how we store it and even how we consume it. Yes, a lot has changed. The steel rolling mill appeared around 1870, replacing (almost completely within ten years) stone mills. This is where industrial white flour was first introduced on a large scale and at lower cost. Instead of crushing all the components together like the stone mill, the steel roller mill could easily separate the flour, allowing cheap production of white flour. Not only was technology booming in terms of machines, but modern science was beginning to take effect. GMOs may be something you've heard of. If not, it's time to start educating yourself about the dangers of GMO foods. GMO means “genetically modified organisms”; that is to say that a seed for example is modified so that it is no longer in its natural state. This change creates a higher yield, but at what cost to your health? It really is a vicious circle. Pesticide manufacturers like Monsanto and Dupont have a lot to do with the changes taking place. Buckwheat is known to reduce cholesterol and help fight diabetes (reduction in glucose levels).6. Kamut: Kamut is actually a brand name. Most people recognize Kamut, which is actually the name of an ancient Khorasan wheat. This wheat provides protein, antioxidants, zinc and selenium. These are just SOME of the healthier and more well-known alternatives. Notice how the benefits of these alternatives are the opposite of those of modern wheat? Modern wheat poses many problems that these alternatives avoid. It's time to rethink our modern wheat. Start making small changes, incorporating more beneficial grains into your diet. Once you start making these small changes, not eating wheat will become natural for you. Most importantly, it will be more natural for your body.
